黑米资源丰富,黑米色素是黑米中重要的生理活性物质之一。黑米色素主要是花青苷类色素,其具有很好的发展前景。综述了黑米黑色素的提取工艺和生理活性功能研究进展,以期为黑米黑色素的开发利用提供参考。
Abstract:
Black rice is rich in china and black rice pigment is one of important physiological active substances in black rice . The major components of black rice pigment are anthocyanins which have a promising prospect . In this paper, the research progress on extraction techniques and functional activity of black rice pigment were reviewed. It provides a reference for utilization and development of black rice pigment .
