摘 要:以我国芒果皮为试验材料,总多酚得率为考察指标,通过单因素及正交试验系统研究了微波辅助提取芒果皮多酚的工艺条件,并研究评价其抗氧化活性。结果表明较佳提取工艺为:V(60%乙醇)∶m(芒果皮粉)=30mL∶1g,微波功率160W处理30s后,于水浴60℃浸提30min,在此工艺条件下芒果皮多酚得率为6.24±0.02%。抗氧化试验表明芒果皮多酚清除DPPH自由基的能力较强,且在一定范围内极显著高于2,6-二叔丁基-4-甲基苯酚(BHT),对卵黄脂蛋白脂质过氧化有一定的抑制作用,但极显著低于BHT。
Abstract:
The Mango peel was used as materials to extract polyphenols, and the content of total polyphenol has been measured ,The single factor and orthogonal experiments were used to explore the optimal condition for the extraction of polyphenols by microwave assisted method and its antioxidant activities were measured.The technological conditions of extracting polyphenols were optimized by orthogonal test design L9(34). The optimum extracting conditions were as follows: the proportion of mango peel powder and 60% ethanol was 30 to 1, microwave power was 160W, microwave extraction time is 30s, then water-bath 30minutes under 60℃ water. The extraction of polyphenols was 6.24±0.02% under these conditions. The results of antioxidant activity showed that comparing with the scavenging ability of butylated hydroxyl toluene(BHT), The T test showed that the scavenging rate of the Mango Peel polyphenols to DPPH radical was significantly higher than that of BHT. However the inhibition of the extract to lipid peroxidation of yolk lipoprotein was significantly lower than BHT.
