文章研究了珠海天香苑生物科技发展股份有限公司生产的纯品型酵母抽提物(GAB00)在素蚝油中的应用,针对素蚝油的配方和工艺进行了研究。通过素蚝油感官评价的方法,结果表明:最佳配比为原晒黄豆酱油44.47%、超滤水25%、糖23%、淀粉4.2%、味精1.5%、5’-呈味核苷酸二钠0.08%、GAB00 1.5%、焦糖色0.2%、山梨酸钾0.05%
Abstract:
The application of pure yeast extract (GAB00) produced by Zhuhai Tianxiangyuan Biotechnology Development Co., Ltd. in vegetarian oyster oil is studied. The formulation and technology of vegetarian oyster oil are studied. Through sensory evaluation of oyster sauce, the results show that the optimum proportion is 44.47% sun-cure soybean sauce, 25% ultrafiltration water, 23% sugar, 4.2% starch, 1.5% monosodium glutamate, 0.08% 5’’-monosodium mononucleotide, 1.5% GAB00 , 0.2% caramel color and 0.05% potassium sorbate
