果醋中含有丰富的多酚、黄酮等抗氧化成分,具有降脂减肥、抗菌、预防糖尿病、降血糖、抗疲劳等生理功能。功能性果醋已成为国内外研究的热点,本文综述了果醋的抗氧化成分和功能性研究,为后期开发新型果醋及其功能因子的研究提供参考。
Abstract:
Fruit vinegar is rich in antioxidants such as polyphenols and flavonoids, and has physiological functions such as lipid-lowering, slimming, antibacterial, diabetes prevention, blood sugar lowering and anti-fatigue. Functional fruit vinegar has become a hot research topic at home and abroad. This paper reviews the antioxidant composition and functional research of fruit vinegar, and provides reference for the research of new fruit vinegar and its functional factors.
