原生态红糖含有多种酚类化合物、类黄酮等物质,具有抗氧化性,因此对机体具有潜在的益处。本文综述了原生态红糖的营养成分、抗氧化性成分、机理及体外抗氧化活性评价的研究进展,旨在为原生态红糖的酚类物质的开发及应用提供一定的参考依据。
Abstract:
Virgin brown sugar contains a variety of phenolic compounds, flavonoids and other substances, it is antioxidant and therefore potentially beneficial to the body. .In this paper, the research progress of nutritional composition, antioxidant composition, mechanism and in vitro antioxidant activity evaluation of virgin brown sugar was reviewed, in order to provide some reference for the development and application of phenolic substances of virgin brown sugar.
