根据15篇涉及发酵泡菜中微生物高通量测序数据的文献分析泡菜中食源性致病菌存在的风险;采用预测微生物学Combase数据库Predictor软件对几种常见食源性致病菌在接近实际泡菜发酵前期条件下的生长趋势进行预测分析。对高通量文献数据的分析显示,泡菜发酵操作方式和泡菜中食源性致病菌污染风险有明显关联:家庭泡菜易出现肠杆菌属和假单胞菌属致病菌,工业泡菜中李斯特氏菌属致病菌出现机会较大;萝卜、白菜泡菜中出现致病菌的机会相较其它原料泡菜更大;发酵时间与葡萄球菌属和李斯特菌属致病菌的出现表现出明显的正相关。对几种常见食源性致病菌在泡菜发酵前期的软件模拟结果的分析显示,高盐泡菜中金黄色葡萄球菌和单核细胞增生李斯特菌有可能生长;中、低盐泡菜中金黄色葡萄球菌和沙门氏菌都可能出现明显生长,沙门氏菌尤其具有较大的生长优势。
Abstract:
According to the data of 15 literature about the high-throughput sequencing of microbial diversity in pickle, the risk of food-borne pathogens was analyzed. The software of the predictive microbiology database Combase was used to predict the growth trend of common food-borne pathogens under the conditions close to the actual short-term pickle fermentation. A nalysis of the data of literature shows that the detection of food-borne pathogens in pickle is significantly correlated with fermentation op erating factor s. Enterobacter and Pseudomonas are the main genus of the home-made pickle, while Listeria is the main genus of the industrial pickle. Compared to others materials , the radish and cabbage pickle are more likely to be contaminated by food-borne pathogens. The detection of Staphylococcus and Listeria is positively related with the fermentation time. Analysis of the predictive results shows that the risk of S.aureus and L.monocytogenes is high in high-salt pickle. Salmonella and S.aureus grow relatively quickly in medium-salt and l ow-salt pickles, especially Salmonella
