番茄是一种常见的果蔬,富含多种营养素,膳食摄入量对人类健康具有重要的营养学意义。它的活性物质具有抗氧化、抗癌作用,对人类健康产生了有益的影响。本文从番茄中的番茄红素、黄酮、多酚进行介绍,对其提取方法展开讨论,并分析了国内外番茄产品的研究现状,以期为番茄加工提供一定的技术理论支持。

Tomato is a common fruit and vegetable, rich in many nutrients, dietary intake of human health has important nutritional significance.Its active substances have antioxidant and anticanc ffects on human health. In this paper, lycopene, flavone and polyphenols in tomato were introduced, their extraction methods were discussed, and the research status of tomato products at home and abroad was analyzed, in order to provide some technical and theoretical support for tomato processing.
