γ-氨基丁酸(GABA)是一种天然的非蛋白氨基酸,广泛分布于动植物、微生物体中。作为动物体中枢神经系统中重要的抑制神经递物质,现已证实,GABA具有安神、调节食欲、降血压、防止动脉硬化和改善脂质代谢等多种生理功能,在食品和医药等领域有着重要用途。目前,GABA主要通过植物富集法和微生物发酵获得。此文基于国内外文献资料调研,系统综述了GABA的生化代谢途径、生理功能、生产工艺以及食品工业中的应用等,让学者更方便的了解GABA的研究动态,为进一步攻关GABA研究难点问题提供科学借鉴。
Abstract:
Gamma-aminobutyric acid (GABA) is a natural non-protein amino acid which is widely distributed in animals, plants and microorganisms. As an important inhibitory to neurotransmitter in the central nervous system of animal s, GABA has a variety of physiological functions such as calming the nerves, regulating appetite, lowering blood pressure, regulating arrhythmia, preventing arteriosclerosis and improving lipid metabolism. It has been applied widely in food, medicine and other fields. GABA was mainly obtained by the methods of plant enrichment and microbial fermentation. In this paper, fields involving the physicochemical properties, biochemical metabolic pathways, physiological functions, production processes and applications of GABA in food industry were systematically reviewed, in order to make it easier for scholars to obtain the research progress of GABA and provide scientific reference s for further focusing on the hot-pot problems in GABA.
