目的 将香蕉皮里面白色刮层粉末作为原料,探讨水提法提取香蕉皮淀粉的最佳工艺条件。 方法 分别选取硝酸钙水溶液浓度、乙醇浓度、香蕉皮粉末过筛目数作为影响因素,采用碘显色法测定其淀粉含量,确定淀粉提取率为指标,进行单因素实验,并在此基础上用Box-Behnken 中心组合设计建立数学模型,以香蕉皮中的淀粉提取率作为响应值,进行响应面分析。结果 结果表明,用硝酸钙水溶液对香蕉皮中淀粉进行提取的最佳工艺条件为:硝酸钙体积分数为80%、乙醇体积分数70%、香蕉皮粉末过筛目数40目。淀粉提取率的预测值为74.69%。结论 通过单因素实验得到的实际值为73.8%, 两者较为接近,说明Box- Behnken 设计结合响应面分析能够很好优化香蕉皮中淀粉提取工艺。

Objective The white scraping powder inside banana peel was used as raw material, and the optimum technological conditions for extracting starch from banana peel by water extraction were discussed. Methods The concentration of calcium nitrate in aqueous solution, ethanol concentration and the number of sieves of banana peel powder were selected as the influencing factors. The starch content was determined by iodine colorimetry. The single factor experiment was carried out with the starch extraction rate as the index. Based on this, the mathematical model was established by Box-Behnken central combination design. The starch extraction rate in banana peel was used as the response value to carry out response surface analysis. Results The results showed that the optimum technological conditions for extracting starch from banana peel by calcium nitrate solution were: the volume fraction of calcium nitrate was 80%, the volume fraction of ethanol was 70%, and the number of sieve mesh of banana peel powder was 40 mesh. The predicted yield of starch was 74.69%.Conclusion The actual value obtained through the single-factor experiment was 73.8%, which was close to each other, indicating that the box-behnken design combined with response surface analysis could optimize the extraction process of starch from banana peel.
