以从泡菜中筛选出的一株亚硝酸盐降解能力较高的植物乳杆菌5-7-3为研究对象,对其培养条件进行优化,提高亚硝酸盐降解率。研究培养温度、发酵液起始pH、接种龄、接种量这些单因素对植物乳杆菌5-7-3降解亚硝酸盐效果的影响,并利用Box-Behnken中心组合试验设计原理设计植物乳杆菌5-7-3培养条件模型,得到亚硝酸盐降解率最高的培养条件:温度37 ℃,pH 6,接种量8%,种龄21 h。该培养条件下菌株的亚硝酸盐降解率达到89.94%,比优化前提高了4.98%。
Abstract:
Lactobacillus plantarum 5-7-3 with high ability of nitrite degradation was selected from kimchi, and its culture conditions were optimized to improve the nitrite degradation rate. The effects of single temperature, incubation pH and inoculation volume on the degradation of nitrite by L. plantarum 5-7-3 were studied. Basis on this result, the model of L. plantarum 5-7-3 culture was designed by using the Box-Behnken central experimental design principle, and the highest degradation rate of nitrite was obtained under the conditions of 37 ℃, pH 6, inoculum 8% Age 21 h. Under these conditions, the degradation rate of nitrite was 89.94%, which was 4.98% higher than that before optimization.
