植物蛋白多肽是一种自植物蛋白消化而来的小分子多肽,原材料来源广泛,且产物具有抗氧化、抑菌等多重功效,在食品、医药等领域具有巨大的应用空间。本研究基于近年来对于植物蛋白质多肽的相关报道,就植物源性蛋白多肽的生物功能、制备方法进行了总结归纳,并对未来植物蛋白多肽的制备和应用前景进行展望,以期为植物蛋白多肽研究领域工作提供参考。
Abstract:
Plant protein peptide is a small molecule peptide that is digested from plant protein. The raw material has a wide range of raw materials, and the product has multiple functions such as antioxidant and bacteriostatic. It has huge application space in the fields of food and medicine. Based on recent reports on plant protein peptides, this paper summarized the biological functions and preparation methods of plant-derived protein peptides, and prospected the future preparation and application of plant protein peptides, in order to provide a reference for further research.
