香菜具有重要的食用和药用价值,关于香菜的研究及开发应用是近年来众学者的研究热点。众多研究表明:香菜含有多酚、芦丁、挥发油和绿原酸等有效物质,具有抗氧化、抗肿瘤、抗焦虑、抑菌和抑制铅沉积等功能。对近年来关于香菜的有效成分提取及分析、香菜的功能及香菜作为饲料添加剂、食品添加剂和重金属吸附剂等方面应用的研究进展进行了综述,并对香菜的研究前景做出展望,以期为香菜的研究提供理论参考。
Abstract:
Coriander has very important edible and medicinal value, therefore, the development and application of cilantro is a hot research topic in recent years. Numerous studies have shown that coriander contains polyphenols, rutin, volatile oil, chlorogenic acid and other active substances which are beneficial to human body. Coriander has important physiological functions such as anti-oxidation, anti-tumor, anti anxiety, bacteriostasis and inhibition of lead deposition. In this paper, the research progress of extraction and analysis of active components, physiological function and its application as feed additive, food additive and heavy metal adsorbent in recent years are reviewed, and the future research of coriander is prospected in order to provide theoretical reference for the research of coriander.
