纤维素是一种天然可再生资源,通过物理和化学方法对纤维素进行处理,可以改变纤维素固有的性质,形成具有特殊功能性质的改性纤维素。目前,改性纤维素已应用于食品和调味品加工中,对增加食品营养、保持食品品质和延长食品货架期具有重要作用。本文总结了了近十年来改性纤维素在食品和调味品加工中的应用研究情况,为推动改性纤维素的进一步研究及应用提供参考。
Abstract:
Cellulose is a natural renewable resource. Physical and chemical methods can change the intrinsic properties of cellulose to form a modified cellulose with special functional properties. At present, modified cellulose has been used in the processing of food and condiments, and plays an important role in increasing food nutrition, maintaining food quality and extending food shelf life. This work summarized the research on application of modified cellulose in food and condiment processing in the last decade, and provides a reference for the further research and application of modified cellulose
