摘要:
为建立一种快速测定调味品中氯化物的新方法,以鸡精、味精为样品,固定时间超声波浸提后,用浓度直读法进行测定。结果表明:样品质量为5.0000g,柠檬酸钠为0.20g/L、pH6.00、硝酸钾为1.40mol/L时,加标回收率在95.01%-101.32%之间,氯离子的检出限为0.0131mmol/L,相对标准偏差小于2.5%(n=5)。该法与国家标准对照测定,经显著性检验表明,两种方法之间不存在显著性差异。该法所用仪器便携、成本低廉、读数直观、快速简便、计算简单,利于现场快速检测,是测定调味品中氯化物的新型分析技术和较好方法,有良好的推广价值和应用前景。
Abstract:
In order to establish a new method for rapid determination of chlorides in condiments , 基金项目:河南省科技攻关项目( JBO2 0624430003 ) *作者简介:高向阳(1949-),河南唐河人,男,教授、研究生导师,主要从事食品安全快速分析与检验等方面的教学和研究工作。E-mail: :ndgaoxy@163.com 13949017097Taking chicken essence and monosodium glutamate as samples, The concentration was determined by direct reading method after ultrasonic extraction at fixed time . The results show that: When the sample mass is 5.0000g, sodium citrate is 0.20g/L, pH6.00 and potassium nitrate is 1.40mol/L,the recovery rate of adding standard solution was between 95.01% and 101.32%, the detection limit of chloride ion was 0.0131 mmol/L and the relative standard deviation was less than 2.5% (n=5). The method was compared with the national standard, and the significance test showed that there was no significant difference between the two methods.The instrument used in this method is portable, low cost, intuitive, fast, simple and easy to calculate.It is a new analytical technique and a better method for the determination of chloride in condiments,and i t has good promotion value and application prospect.
