以企业两个鸡汁产品为研究对象,使用成对比较检验法对两个鸡汁产品进行感官评价,结果显示,两个鸡汁产品的差别成对比较感官评价有较显著差异,偏好程度感官评价中差异显著,其中一个更受偏好。而在定向成对比感官评价中,两个鸡汁产品感官指标中的咸味差异较显著,鲜味、鸡肉香味和色泽差异显著,透明度和甜味无差异,与雷达图结果分析一致。
Abstract:
Taking the company’’’’s two chicken juice products as research objects, sensory evaluation of the two chicken juice products using a pairwise comparison test show that the pairwise comparison test between the two chicken juice products is significantly different, and the difference in sensory evaluation of preference level is significant, one of chicken juice is more favored. In the orientation-comparison sensory evaluation, the salty taste difference was found to be significant in the sensory indicators of the two chicken juice products, and the difference in flavor, chicken flavor and color was significant, and there was no difference in transparency and sweetness,and which consistent with radar chart results analysis.
