对黄芪党参当归三种配伍中草药复合水煎液腌制泡菜的品质特色进行评定采用浓度为0.6g/mL的水煎液腌制泡菜,发酵成熟后
Abstract:
The aim of the present study is to evaluate the quality and characteristics of pickling vegetables with compound water decoction with three Chinese herbs such as astragalus, Codonopsis pilosula and angelica. The water decoction with concentration of 0.6g/mL is used to pickle vegetables. After fermentation the pickling vegetables have been evaluated by the sense of evaluating groups, as well as determined and analyzed physicochemical properties and microbiological index. The experiment result shows that the sensory evaluation is excellent, and the physicochemical properties meet the relative national standards, and both the pathogen and coliform bacteria are not detected. The product belongs to a new type of medicated health-care pickled vegetables, which has high quality and unique flavor
